Ingredients

2 pounds thighs, chicken (boneless, skinless)
1 cup yogurt, Greek (plain)
2 cloves garlic (minced)
2 tablespoons olive oil, extra virgin
1 tablespoon cumin, ground
1 tablespoon coriander, ground
1⁄2 tablespoon paprika, ground
1⁄4 teaspoon cinnamon, ground
1⁄2 tablespoon mint, dried
2 tablespoons lemon juice
  salt and pepper (to taste)

Instructions

  1. Combine the Greek yogurt, spices, garlic, lemon juice, and olive oil.
  2. Cut the chicken into 1-inch strips. Coat the chicken with the marinade and let sit 1-2 hours. Skewer the chicken by starting at one end of the strip and ribboning the chicken onto the skewer. Once all the chicken is skewered, season with salt and pepper.
  3. Grill the skewers for 5-6 minutes on each side or until the chicken is cooked through.
