This tomato-based vegetable stew was taught to us in one of our Mosaic of Flavors classes. All measurements are approximate! Adjust quantities and types of vegetables according to season and taste.
Crush garlic and cilantro together in a mortar and pestle.
Sauté the onion in vegetable oil until translucent. Add tomatoes and cook down to sauce. Add remaining vegetables and chickpeas and season with garlic/cilantro mixture, cumin, and salt to taste. Simmer for 15 minutes or until the veggies are tender.
