A simple, classic loaf bread that's perfect for fall. Add 1/2 cup chopped walnuts and dates for texture; or sprinkle chopped crystallized ginger along the length of the bottom of the pan.
Preheat oven to 350. Grease and flour a 9x5 loaf pan or line with parchment paper.
Cream together butter and maple syrup. Add eggs and mashed pumpkin. In a separate bowl, sift together whole wheat pastry flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Combine wet and dry ingredients, adding 1/3 cup water.
Bake at 350 for about 1 hour or until a toothpick inserted in the center comes out clean.
