This makes a large, crunchy slaw that you can throw together in minutes.
Peel the kohlrabi, and finely chop kohlrabi, carrot, watermelon radish, onion and scallions; or optionally grate the roots and finely chop the onion and scallions. Combine in a bowl with other ingredients. Adjust saltiness and hotness according to taste. Store in refrigerator for up to 3 days.
