These muffins have a nice, fluffy texture and provide good energy. They were taught in a City Market class on healthy snacks for active lifestyles.
Preheat oven to 425. Combine dry ingredients. In a separate bowl, combine milk, eggs, honey and oil. Mix until just moist. Stir in nuts, raisins, and apples/banana/pumpkin. Fill greased muffin tins.
Bake 15-17 minutes. Makes 12 muffins.
Variation: Replace the 3/4 cup chopped apple with 2 bananas, mashed or 1/2 cup pumpkin puree or 1/2 cup applesauce.
