These delicate Italian cookies, sometimes called lace cookies, are delicious plain, or decadent with a chocolate or dried cherries and hazelnuts.

1 cup
brown sugar
3/4 cup
2 cups
rolled oats
1/2 teaspoon
baking soda
1/4 teaspoon

Preheat oven to 375.

In a saucepan, combine brown sugar and butter. Cook and stir over low heat until melted. Remove from heat. Stir in rolled oats. Add baking soda, salt, and egg.

Line baking trays with parchment paper. Drop very small amounts 2 to 3 inches apart. Bake for 5-7 minutes. Remove and cool.

Chocolate Variation: Melt 1 cup good quality chocolate. When cool enough to handle, make a sandwich using two cookies and a thin layer melted chocolate in between.

Dried Cherry and Hazelnut Variation: Add ½ cup dried unsweetened cherries and ½ cup roasted hazelnuts (both chopped fine) to Florentine batter.
