Dandelion Pesto

Description

This pesto is slightly more bitter than the taste of traditional basil pesto. Try it on toasted bread with mozzarella or in pasta salads. Other herbs such as basil, catnip, or cilantro may be added for flavor.

Ingredients

1/4 cup
pine nuts
1/4 cup
olive oil
1 bunch
dandelion greens
1/4 cup
cheese, parmesan
4 cloves
garlic

Instructions

Blanch the greens (10 seconds in hot water, then in cold).

Chop the greens and put in a food processor with the remaining ingredients and blend.
