Crustless Spinach Quiche

Ingredients

2 teaspoons
oil
1  
yellow onion
1 package
spinach, frozen chopped
6 ounces
cheese, cheddar
6  
egg whites
1  
egg
1/3 cup
cottage cheese
1/4 teaspoon
cayenne pepper
1/8 teaspoon
salt
1/4 teaspoon
nutmeg

Instructions

1. Preheat oven to 375 degrees and coat a 9 inch pie plate with cooking spray. In a nonstick skillet over medium heat, heat oil. Add onion, cooking for 5 minutes until translucent. Add spinach and stir until water evaporates. Sprinkle cheese evenly into prepared pie plate. Top with spinach mixture. In a medium bowl, whisk eggs whites, egg, cottage cheese, red pepper, salt and nutmeg. Pour egg mixture evenly over spinach. Bake 30- 40 minutes. Let stand for five minutes. Cut into wedges and serve.
