City Market's Southwestern Tofu

Description

Spicy and healthy, this tofu salad makes a great side dish.

Ingredients

1/4 cup
tamari
2 tablespoons
chili powder
1 tablespoon
cumin
1 teaspoon
black pepper
2 pounds
tofu
1 cup
corn niblets
15 ounces
black beans
3/4 cup
red onion
2 tablespoons
oregano
3/4 cup
tomato juice
2 tablespoons
lime juice
2 tablespoons
sunflower oil
3 cloves
garlic
   
salt & pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. To prepare the tofu, mix the tamari, chili powder, ground cumin and pepper in a large bowl, breaking up any lumps. Add in tofu cubes and gently mix to coat thoroughly.
  3. Spread evenly on a sheet tray being careful not to overcrowd. Roast at 425°F for 25-30 minutes or until nicely colored.
  4. Combine remaining ingredients in a large bowl and mix well. Add the roasted tofu and adjust seasonings to taste.
