This is a beautiful fresh salad perfect for citrus season.
Place the red onion in the bottom of a medium bowl and toss with 1 tablespoon of orange juice.
Peel the oranges and grapefruits. Turn the fruit on their side and cut into 1/4-inch thick wheels, removing any seeds and thick white stem.
Spread the fruit slices on a platter. Sprinkle the onion over the slices. Whisk the remaining tablespoon of orange juice with red wine vinegar, mustard and olive oil. Drizzle the dressing over the citrus, sprinkle with feta and mint, and add salt and pepper to taste.
