African Pineapple Peanut Stew

Description

Pineapple peanut stew with chard might sound like an odd combination, but trust us, this is one of the best vegetarian/vegan entrees out there. Quick to prepare, flavorful, and healthy!

Ingredients

1 cup
onions
2 cloves
garlic
1 tablespoon
olive oil
4 cups
chard
2 cups
pineapple
1/2 cup
peanut butter
1 tablespoon
Tabasco
1/4 cup
cilantro

Instructions

 

Saute the onions in a large saucepan or wok. When they are transparent and tender, add the garlic and the pineapple (with its juice) and bring to a simmer. Stir in the chopped chard and simmer for 5 minutes until the greens are wilted. Add the peanut butter, Tabasco, and optional cilantro and combine. Add salt to taste and serve over rice, quinoa, or other grain, garnished with chives and peanuts if desired.
