Olive Oil Mayonnaise Ingredients: 1 egg yolk 1/3 cup olive oil 1/2 teaspoon mustard 1 pinch salt black pepper 1/2 teaspoon white wine vinegar Instructions: Put the egg yolk in a heavy bowl. Put the bowl on a damp cloth to steady it. Whisk in a few drops of olive oil VERY SLOWLY (depending on how slowly you add the oil, your mayonnaise might be thick or a little runny – but still totally useable!). Keep whisking in a few drops at a time until you have poured at least a tablespoon, then begin pouring in a slow stream and whisking until you have incorporated all the olive oil. Whisk in the mustard, salt, pepper, and vinegar. Taste and adjust the seasonings. Description: A healthy mayonnaise you can feel good about.
