1. Preheat oven to 475 degrees. Coat large baking sheet with cooking spray and set aside. In a medium bowl, combine breadcrumb substitute, cheese, and flax seed. Dip each piece of chicken into melted butter and bread crumbs to coat. Arrange in a single layer on a baking sheet and bake for 8 minutes or until chicken is cooked throughout and juices run clear.
