This is the simplest mousse to make. Be warned: It is super rich.
Place the chocolate in a microwave-safe bowl and cook at high heat for 1 to 2 minutes, stirring often, until the chocolate is just melted. Set aside to cool to room temperature.
While the chocolate cools, whip the mascarpone cheese with a hand-held or stand mixer; add the sugar and vanilla and whip again to combine. In a separate bowl whip the heavy cream to soft peaks. Add the mascarpone mixture to the bowl with the cream and whip until stiff.
Gently fold in the chocolate, carefully working the chocolate into the cream mixture until it is just incorporated. To serve, top with a dollop of whipped heavy cream, chocolate shavings and/or raspberries.
