There’s something about fresh local eggs, poached in a bed of flavorful greens that says spring is here. Christine Bourque from Blue Heron Farm in Grand Isle will join us to talk about eggs from an organic farmer’s perspective – what the different labels on eggs signify (local, organic, cage-free, pastured, etc.) and tips for preparing great eggs any number of ways. Then we will celebrate the first day of spring by making and eating “eggs in a nest” (a recipe adapted from Barbara Kingsolver’s Animal, Vegetable, Miracle), steamed vegetables with homemade hollandaise sauce, and custard pie for dessert.
