Peter Roscini Colman started Vermont Salumi after gaining years of experience in organic agriculture and sales.  Born in Italy, Peter completed multiple apprenticeships with old world butchers in his home country. He now produces sausages and dry cured meats made from pasture raised pigs that are free of hormones and antibiotics.  In addition to City Market, you can find Vermont Salumi for sale at the Burlington Farmers' Market, the Capitol City Farmers' Market, or at their farm store in Plainfield.
