Shelburne Farms is a non-profit dedicated to educating for a sustainable future, and their campus includes a working farm and forest.  Shelburne Farms started making cheddar in 1980 using raw milk from their Brown Swiss cow herd which is pastured and milked at the farm. Now, their cheesemakers craft about 170,000 pounds of cheddar each year (that's a lot of cheese!). You can find their cheddars in our Cheese Department, and you can stop by Shelburne Farms to see their cheesemakers in action 10 months out of the year.
