Fridge-foraged dinners - for nights when you don’t want to shop, but the fridge and pantry are relatively empty. Join Melissa Pasanen to learn how to create dinner out of not much, use up random things tucked in the back of the fridge and pantry, and cut food waste to boot. With a list of pantry staples to keep on hand and two basic methods -- Mexican-style bean bake and Mediterranean grain bowls -- plus 7 ways to make eggs into dinner. Melissa has worked as a food and agriculture journalist and cookbook author for close to 20 years. She is currently a contributing writer to the food section of Vermont’s alt-weekly, Seven Days. Prior to that, she was food editor for Vermont Life magazine and a regular contributor to the Burlington Free Press. She has authored or co-authored three cookbooks, including the New York Times notable cookbook, Cooking with Shelburne Farms: Food and Stories from Vermont. Her work has been published in The New York TimesUSA TodaySaveurEatingWell, and on Foodnetwork.com, among many others.
