This monthly series is a collaboration with the USCRI Vermont Refugee Resettlement Program. For December's class we welcome Ahmed "Kismayo" Omar, who will share with us his love of healthy Somali cuisine. Ahmed is a chef, online nutrition coach and personal trainer. He attended culinary school in Kenya before moving to Vermont with his family in 2014. Ahmed has developed a unique style of cooking that blends traditional Somali flavors and techniques with his own interest in food that is healthy, clean, seasonal and easy to prepare. Ahmed calls his style of cooking "healthy Somali fast food." Ahmed will teach three delicious recipes that anyone can prepare at home: Doro, oven-roasted spiced chicken with peppers and onions; Bris, an oven-baked herb rice infused with cilantro, cumin and cardamom; and Ager, a traditional sautéed greens dish seasoned with onion, garlic and pepper. Ahmed will also teach how to plate and garnish the dishes for a beautiful presentation. Ahmed will be joined by his wife, Anita Omar, who will teach how to prepare traditional spiced tea, a staple of Somali hospitality.
