This monthly series is a collaboration with the Vermont Refugee Resettlement Program. The Chamorro people are the indigenous people of the Mariana Islands, which includes Guam. Local Chamorros Maria Garrido and Ita Meno will teach participants how to make Chicken Kelaguen and Vegetable Escabeche as part of a traditional Chamorro meal. Chamorro cuisine is heavily influenced by the Pacific trade routes, Spanish and Portuguese exploration in the 16th Century, and the island's status as an American territory after the Spanish-American war. Many dishes are adaptations of ones found in traditional Spanish, Mediterranean, Asian and American cuisines. The chosen dishes reflect the tradition of preserving foods using acidic ingredients, such as citrus juice and vinegar. Chicken Kelaguen is a spicy cold salad that is marinated in citrus and coconut milk. Escabeche is a dish adapted from the original Spanish dish where local seasonal vegetables such as bok choy, long beans, opo squash and Chinese eggplant are cooked in a mixture of spices and vinegar.
